The blade is the familiar 8-inch flexible fillet grind in DEXSTEEL high-carbon steel; what changes is the handle. The V-LO grip is a soft over-moulded compound with a thumb rest, and it is markedly less slippery than hard polypropylene when covered in slime and water.
That matters on a cleaning table more than anywhere else, because fillet work is the wettest job in a kitchen and the one where a slip is most likely to cost you. The knife suits the same fish as any 8-inch fillet — walleye, trout, sea bass, snapper.
