Allergen control usually fails on small equipment rather than large — a shared paring knife, a shared spreader. Purple exists so those tools can be pulled from a separate rack without anyone having to remember which one was clean.
The blade is the S104 cook’s-style paring pattern: 3.25 inches, slightly deeper than a standard paring blade so it can be used flat on a board as well as in the hand.
