A rounded turner slides under food; a square-ended one does that and also works as a scraper, because the full three inches of edge meets the griddle at once. On a surface that needs clearing between orders that is a second tool you no longer need.
Eight inches of blade gives real reach and enough surface to move several items at a time. It is solid rather than perforated, so it carries sauce and fat along with the food instead of letting it drain onto the griddle.
