Four by three inches is the smallest turner in Dexter’s griddle range, and the reason to want it is spacing. On a full griddle a large blade cannot get under one patty without disturbing the two next to it; this one slides in, lifts and comes out clean.
The H suffix is the high-heat handle. A standard polypropylene grip left resting on a hot rail will eventually deform; the Cool Blue material is specified to tolerate that, which is why it is the version that goes to grill stations rather than prep benches.
Dexter-Russell has made cutlery in Southbridge, Massachusetts since 1818 and is the oldest cutlery manufacturer in the United States. Cool Blue is its high-heat handle material — rated to stay usable at grill and fryer temperatures that soften ordinary polypropylene.
