A four-piece paring set built around Rada T420 high-carbon stainless blades, each hollow-ground so the cutting edge stays thin behind the bevel rather than wedging through soft fruit. The brushed aluminum handles are cast solid, so there is no hollow rattle and no seam where a rivet can loosen.
These are the knives that live in the front of the drawer: coring tomatoes, deveining shrimp, segmenting citrus over a bowl, taking the eyes out of potatoes. The short blade gives you knuckle clearance against a cutting board and enough control to work in your hand, away from the board entirely.
Rada Mfg. Co. has been making cutlery in Waverly, Iowa since 1948, and grinds and assembles every blade at that plant.
