What sets this apart is the tooth geometry: the R126 carries deep scallops ground into T420 high-carbon stainless, spaced so the points bite skin under almost no downward pressure. That matters on a ripe tomato, where a straight edge has to compress the fruit before it cuts and you lose the first slice to bruising.
On a sandwich line it earns its keep in one pass: thin tomato rounds, then straight into the roll without swapping knives. It slices lemons and limes over a glass, halves a bagel that has gone slightly stale, and cuts through the waxy skin of a bell pepper without skating.
