The Dexter-Russell 21945 (model 01255) is a 6-inch wide stiff boning knife from the Traditional line — wider blade profile and stiffer flex than the standard narrow boning knife. Forged from stain-free high-carbon steel with a triple-riveted beech-wood handle, the wider blade gives extra surface for breaking down larger primal cuts of beef, pork, and lamb where a narrow flex blade would slow you down.
