This John Boos block is built from blended American walnut in a 12-by-25-inch footprint and 1.5-inch thickness, sized to fit a narrow run of counter or sit out as a charcuterie board. The edge-grain construction presents a flat, durable working face.
It slides into a tight kitchen as a dedicated chopping strip, then cleans up to serve cheese and cured meats for guests. A wipe of mineral oil now and then keeps the walnut sealed and even-toned.
John Boos has been making hardwood blocks in Effingham, Illinois since 1887, and this walnut top carries the same pressure-glued edge-grain build as its larger islands.
