The 40D pattern pairs a Duo-Edge blade with a black alloy handle rather than wood or plastic. The hollow-ground ovals along the blade face stop hot slices from clinging, and the alloy handle takes hard washing without swelling or cracking.
It is a carving station knife: prime rib, roast turkey, ham, anything sliced hot and plated straight away. The release matters most when the slice is thin, because a thin slice that sticks tears rather than lifts.
