An 8-inch cook’s knife is the default blade in most kitchens, and the Traditional version is Dexter’s long-standing take on it — high carbon steel, straight ground, with the shaped handle the line is known for rather than a moulded grip.
It covers the everyday: chopping onions, portioning chicken, slicing squash, working through a board of vegetables. The size is the compromise that works, long enough for volume and short enough to stay controllable.
Dexter-Russell has manufactured cutlery in Southbridge, Massachusetts since 1818, and remains the oldest American cutlery maker in business.
