Nine inches of scalloped DEXSTEEL high-carbon steel, ground narrow so the blade releases rather than drags. The scallops are what let it start a cut on a hard crust without skating, and they keep working long after a plain edge has rounded off.
It is sized for the wider jobs on a sandwich station — full sub rolls, hero sandwiches, sliced loaves — where a shorter blade has to be pulled back for a second stroke and the filling shifts. One pass keeps the sandwich intact.
