Offset is the defining feature. The handle sits above the blade line, so on a tall sandwich or a deep sub the hand clears the board and the blade can be driven straight down through every layer at once rather than at an angle.
Nine inches of scalloped edge crosses a full sub roll in one pass. The green handle assigns it to produce-side or salad-station use in a coded kitchen, keeping it apart from the raw protein boards.
