The clip point is the distinction: the spine curves down toward the tip, leaving a narrow point that enters cleanly. On a paring knife that translates into piercing skins, lifting eyes out of a potato and cutting small detail that a rounded tip cannot start.
Detail work is where it lives — scoring, decorative cuts, digging out blemishes, opening packaging on a prep bench, deveining prawns. It is a different job from the plain cook’s-style parer, which is why kitchens often keep both patterns.
