The scalloped version of the SG145 is a deliberate compromise and a useful one. It gives up some of the plain edge’s clean push-cut on soft herbs, and in return it bites straight through skins and crusts that would make a smooth blade slide.
That trade suits sandwich and salad stations, where the same knife has to go from a baguette to a beefsteak tomato to a cooked brisket in a minute. The SofGrip handle carries the same rubberised over-mould as the plain-edge version, so grip does not change when hands are wet.
