This is the SofGrip build of the 6-inch scalloped utility blade. The rubber compound handle grips actively when wet rather than relying on surface texture alone, which is the practical reason kitchens spend more on this line than the moulded polypropylene one.
Wet stations are where it belongs — a salad line, a garde manger bench, anywhere produce is washed and cut in the same motion. The 6-inch scalloped blade still does the tomato-and-citrus work, but the handle is what keeps it safe with wet hands.
