A Chinese chef’s knife is not a cleaver. The blade is thin and ground for slicing, not for going through bone — its width is there so the flat can crush garlic, scrape a board clean and carry prepped food to the pan without a second tool.
The yellow SofGrip handle is the point of this particular version. HACCP colour separation assigns yellow to raw poultry, so a station working through chicken can keep this blade visibly distinct from the boards and knives handling produce or cooked food.
Dexter-Russell has made cutlery in Southbridge, Massachusetts since 1818 and is the oldest cutlery manufacturer in the United States. SofGrip is its soft-handle line — a rubberised over-mould on a polypropylene core, sealed to the tang and rated for commercial dishwashers.
