The No.12 is Field’s big searing pan at 13.38 inches. Cover it and it becomes something else entirely: a braiser wide enough for a whole chicken cut into pieces, or short ribs laid flat rather than stacked.
The lid is cast iron, so it stores heat and sends it back down into the food, and it will go in the oven or over a fire exactly like the skillet does.
