The John Boos CCB-Series 15″ x 15″ butcher block is end-grain Northern hard maple at 3″ thickness, 19 pounds, with recessed finger grips and a checkerboard end-grain pattern across the working surface. End-grain construction stands the wood fibers on end, letting knife edges pass between the fibers rather than slicing across them — that’s why end-grain boards stay sharp longer and resist deep cut marks.
The 15×15 square footprint fits standard countertop work zones for chopping, mincing, and breaking down whole chickens or roasts. The 3″ thickness gives it heft to stay in place without slipping during heavy knife work.
