The half sheet is the workhorse pan of a baking kitchen: a full batch of chocolate chip cookies fits on one, a whole sheet pan dinner fits on one, and roasted vegetables have room to brown instead of steam.
Pure aluminum conducts heat more evenly than steel, so cookies bake the same color edge to edge and there are no hot spots that scorch the center.
