Two things separate this from the standard 9-inch fillet: the blade is ground narrower, which lets it track closer to the spine, and it ships with a sheath. Narrow blades bend more readily, so this one rewards a lighter hand and gives better feedback along the bone.
It is a knife that leaves the kitchen — dock work, a boat, a cleaning table by the water, where a sheath is the difference between a knife you can carry and one you have to roll in a towel. On the fish it suits precise work close to the frame.
Dexter-Russell has manufactured cutlery in Southbridge, Massachusetts since 1818, supplying fillet knives to American commercial and sport fisheries throughout.
