The blade here is stamped rather than forged, which keeps it thin and light — an advantage when the job is repetition rather than force. Eight inches of scalloped DEXSTEEL edge gives enough length for sandwiches and small loaves, and the narrow grind means slices fall away rather than clinging.
This is a service-line knife: portioning sandwiches to order, slicing subs, cutting through layered rolls where a heavier blade would compress the filling. The light weight is what makes it comfortable when the same cut is repeated a few hundred times.
Dexter-Russell has manufactured cutlery in Southbridge, Massachusetts since 1818 and remains the oldest American cutlery maker in operation.
