Blue is the seafood code. In a kitchen running colour separation the blue-handled knife stays on the fish board and never crosses to produce or cooked food, and because the coding is visible from across the room a supervisor can see a breach without stopping anyone.
The knife underneath the colour is Dexter’s S145 — an 8-inch curved DEXSTEEL blade, the most general-purpose length there is. Eight inches rocks comfortably on a board, is long enough for a whole fish, and short enough to control on fine work.
