Twelve inches is a carving and slicing length. The blade is high-carbon stainless steel and the handle is the 360 series build — a rigid core with a soft over-moulded contact surface, which helps on a long blade where control comes from the grip.
Roasts, hams, large loaves and anything that needs a single uninterrupted stroke are what the length is for. A long blade crossing a joint in one pull gives an even face; a short blade taking two passes leaves a step.
Dexter-Russell has manufactured cutlery in Southbridge, Massachusetts since 1818, and remains the oldest American maker of it.
