This is the short end of Dexter’s Sani-Safe cook’s knife range — a 6-inch curved blade ground for rocking cuts rather than long slicing strokes. The steel is DEXSTEEL high-carbon stainless, and the textured white polypropylene handle is moulded around a full tang so there is no seam for food to collect in.
Six inches is the length most cooks reach for when the work is small and repetitive: dicing onion, mincing garlic, breaking down peppers, trimming herbs on a wet board. The textured handle keeps its grip with damp hands, which is why this pattern turned up in commercial kitchens long before it reached home ones.
