The Duo-Edge grind is Dexter’s answer to a problem every slicer has: a plain edge grips soft interiors and a fully scalloped edge shreds them. Duo-Edge puts shallow scallops on one side and a flat grind on the other, so the scallops break the surface and the flat side finishes the cut cleanly.
At 10 inches and narrow, this is a carving and portioning blade rather than a bread knife — roast beef, brisket, turkey breast, gravlax, a terrine. The narrow profile matters more than it sounds: less steel in contact with the food means less friction, which is what stops a slice from folding over halfway through.
