This is the Traditional fillet: a flexible 8-inch blade set into shaped beech wood held with rivets. Wood behaves differently from plastic in the cold — it does not go slick and hard the way a moulded handle does on a winter dock.
It suits the same mid-size fish as any 8-inch fillet knife, and it is the pattern to reach for when the work happens outdoors. Beech wants drying after use rather than being left wet, which is the trade for the grip.
