The perforations are the entire difference from the solid S286-8H. Anything cooked in fat — bacon, sausage, fried eggs, hash browns — comes off a solid blade carrying a film of grease with it. A perforated blade lets that drain in the second it takes to lift and turn.
It is otherwise the same 8 by 3 inch stainless blade with the same reach, and the same Cool Blue high-heat handle rated for griddle-side use. On a fryer or a fatty griddle it is the more useful of the two.
