A spreader is a knife with the cutting deliberately taken out of it. The blade is flexible enough to load and sweep in one motion, blunt at the tip so it does not puncture a slice, and wide enough that a single pass covers most of the surface.
The SofGrip handle is the reason this one gets picked up on a sandwich line. Spreading is a wrist motion done hundreds of times a shift, and the cushioned over-mould keeps that from concentrating in one spot on the palm.
Dexter-Russell has made cutlery in Southbridge, Massachusetts since 1818 and is the oldest cutlery manufacturer in the United States. SofGrip is its soft-handle line — a rubberised over-mould on a polypropylene core, sealed to the tang and rated for commercial dishwashers.
