This is a John Boos finger-jointed cherry island top, 30 by 25 inches and 1.5 inches thick, finished with food-safe mineral oil. The edge-grain cherry rails are glued under pressure into a flat, dimensionally stable slab that resists warping.
It works as a freestanding island surface, a baking and pastry station, or a permanent chopping zone built into a counter. A periodic coat of board cream or mineral oil keeps the wood sealed and the color rich.
John Boos has made maple and cherry butcher blocks in Effingham, Illinois since 1887, supplying professional kitchens and home cooks with the same edge-grain construction.
