Most moulded kitchen handles are subtly handed — shaped around a right-hand grip. Dexter 360 is deliberately symmetrical, which is why it turns up in shared kitchens and training environments where the same knife passes between people.
The blade is a straight-edge santoku at 7 inches: flatter than a chef’s knife, so it cuts by pressing down rather than rocking, and it produces very even slices as a result. Stain-free high-carbon steel, NSF certified for commercial use.
