A clip point puts the tip low and fine, which is what you want for piercing skin and getting under a joint. This blade is hollow ground — concave rather than flat — so the edge stays thin and cuts with very little pressure at close range.
It is a poultry knife first: separating wings, opening a thigh joint, trimming around a rib cage, taking out an oyster from the back. The short blade means the whole cutting edge is within a couple of inches of your fingers, which is where the control comes from.
