A two-piece set of the Sani-Safe scalloped parer — 3-1/4 inch DEXSTEEL high-carbon blades ground with a scalloped edge. On a blade this short the scallops matter more than on a long one, because there is not enough length to saw with; the edge has to bite immediately.
Paring knives do the handwork: coring tomatoes, hulling strawberries, peeling apples, trimming pepper ribs, scoring citrus. Having two means one stays clean for fruit while the other handles onion and garlic, which is a small thing that saves a wash mid-prep.
