On a fish station the extra two inches over the 8-inch version earn their keep. A salmon side, a large snapper, a whole tuna loin — all of them are longer than an 8-inch blade, and every restarted cut is where the flesh tears.
Blue is the code that keeps it on that station. Combined with a blue board and blue-handled tongs, the separation is visible rather than remembered, which is what makes it survive a busy service.
