Flex is the whole design question on a fillet knife, and 8 inches of DEXSTEEL high-carbon steel ground thin gives a middle setting — it bends against a rib cage and springs back rather than folding. The Sani-Safe handle is textured, which is what keeps it usable with wet, slick hands.
