Green is the produce code, and it is the busiest station in most kitchens — which makes it the colour most worth having a dedicated 8-inch chef’s knife for. Keeping produce prep on its own blade is also the simplest allergen and cross-contamination control there is.
The blade is Dexter’s S145: an 8-inch curved DEXSTEEL grind that rocks cleanly for herbs and onions and has enough length to break down a squash or a case of peppers without feeling short.
Dexter-Russell has made cutlery in Southbridge, Massachusetts since 1818 and is the oldest cutlery manufacturer in the United States. The Sani-Safe line is its NSF-certified foodservice range, built around a textured polypropylene handle moulded to the tang so there is no seam for food to lodge in.
