On a long rocking blade, two-handed use gives the most even pressure — but it also means both hands are committed. This attachment adds a bridge handle across the spine so the knife can be worked one-handed while the other hand steadies the pie or the peel.
It is cast aluminium rather than moulded plastic, and it secures with two Allen screws through the spine rather than a clamp, so it does not creep along the blade under repeated pressure. It fits Dexter’s S160 series pizza knives.
Dexter-Russell has made cutlery in Southbridge, Massachusetts since 1818 and is the oldest cutlery manufacturer in the United States. The Sani-Safe line is its NSF-certified foodservice range, built around a textured polypropylene handle moulded to the tang so there is no seam for food to lodge in.
