A launch peel puts the pizza in. A turning peel is what keeps it from burning on one side, and if you have ever tried to rotate a pizza with a big launch peel inside a 900-degree oven you already know why you need one.
This is a 9-inch aluminum disc on a 31.5-inch handle, long enough to reach the back of the oven without cooking your forearm. The head is small enough to slide under a pizza and spin it in place rather than shoving it around the deck.
The wooden handle detaches for storage and a leather strap lets you hang it. Chicago Brick Oven makes it in the USA.
