A sandwich station is where allergen separation is hardest to hold, because everything happens on one bench in a few seconds. A purple-handled knife stored apart from the others is the control that survives that pace, because it takes no thought to apply.
The knife itself is the standard S163: a 9-inch scalloped blade on an offset handle, so the hand clears the board and the cut goes straight down through a full-height build without compressing it.
Dexter-Russell has made cutlery in Southbridge, Massachusetts since 1818 and is the oldest cutlery manufacturer in the United States. The Sani-Safe line is its NSF-certified foodservice range, built around a textured polypropylene handle moulded to the tang so there is no seam for food to lodge in.
