Wide boning knives exist for heavy work. Where a narrow blade follows a contour, a wide one has the spine depth to resist twisting when you are separating a shoulder or working through cartilage — and the extra belly means it can trim fat on the same pass.
The SofGrip handle is the reason this one shows up in cold rooms. It is a rubberised over-mould, so it holds grip in fat and water where hard polypropylene starts to slip, and it damps some of the shock that goes into the hand on a heavy stroke.
