This is the serrated 12-inch in the range. Scallops solve entry rather than travel — on a bark, a crackling or a baked crust, a plain edge skates before it drops in, and a scalloped one catches on contact and pulls through.
Brisket, glazed ham, crusted roasts and large hard-crusted loaves are the jobs. The 12-inch length still lets a full joint or loaf be crossed in one stroke once the edge is through the outside.
