This is the middle size in Dexter’s Sani-Safe cook’s knife range, and the one that does the widest spread of work. The blade is DEXSTEEL high-carbon stainless with a taper that lets it rock cleanly through a pile of vegetables, set into a textured polypropylene handle moulded directly onto a full tang.
Eight inches covers most of what a board asks for: quartering cabbage, portioning chicken, slicing squash, working through a tray of vegetables before service. It is the length that stays useful whether the job is a single dinner or a prep list that runs for hours.
