This is a two-knife set rather than a single blade — Dexter item 20373 covers both the 7-inch and the 9-inch offset slicer. Both carry the same scalloped DEXSTEEL edge and the same offset handle geometry; the difference is reach, and having both means you are not dragging a 9-inch blade through a bread roll.
The 7-inch handles rolls, baguette sections and individual sandwiches. The 9-inch takes on the full loaves — sourdough boules, sandwich bread, anything where the blade needs to clear the width in one stroke. Between them they cover a bakery counter or a kitchen that turns out its own bread.
