A two-knife pack of the V-LO parer, Dexter item 29493. The blade is 3-1/2 inches of scalloped DEXSTEEL, and the handle is the soft over-moulded V-LO grip — the difference shows up after an hour of trimming, when a hard handle starts to press into the palm.
Parers do the most repetitive work in a kitchen: coring, hulling, peeling, trimming ribs out of peppers. Two in a pack keeps one clean for fruit while the other takes on onions, and gives you a spare when one is in the wash.
Dexter-Russell has been making cutlery in Southbridge, Massachusetts since 1818, and is the oldest American cutlery manufacturer still in business.
