The 360 series handle is the departure here: a polypropylene core over-moulded with Santoprene, giving a firm structure with a soft contact surface. The blade is a 3-1/2 inch spear point — symmetrical, straight ground, and equally usable left or right handed.
Parers earn their place on the small work: coring, peeling, hulling, trimming. A spear point centres the tip on the blade axis, which makes it predictable when you are pushing it into something rather than drawing it along.
Dexter-Russell has manufactured cutlery in Southbridge, Massachusetts since 1818. The 360 series is its newest handle platform.
