Two design choices work together here. The santoku profile is nearly flat, which favours a straight downward push cut and produces very even slices. The Duo-Edge grind puts shallow scallops along one side, and those scallops break the vacuum that makes potato, cucumber and cheese cling to a smooth blade.
The result is a knife for anything cut thin and stacked — mandoline-style vegetable work without the mandoline. At 7 inches on a SofGrip handle it is light enough to use one-handed for long stretches.
