Fillet work is the wettest thing a knife does, and a rubber compound handle grips under those conditions in a way that textured plastic does not. The blade is 8 inches of flexible DEXSTEEL, ground to bend against a rib cage and return straight.
On a cleaning table or a fish counter the handle is the safety feature — a slipping fillet knife is the classic way to open a hand. The blade suits the usual mid-size fish, and the flex takes the fillet off the frame cleanly.
