Two extra inches over the 8-inch S132N changes what the knife is for. Ten inches will run a full seam on a beef side in one draw, and fewer strokes means a cleaner separation — every restarted cut is a place where the seam tears.
The narrow grind is what keeps it usable. A 10-inch wide cimeter carries a lot of steel and wants to go straight; the narrow blade is lighter through the cut and follows the seam. It is the pattern most beef breakers settle on.
