This is the plain-edge counterpart to the scalloped parer — same 3-1/4 inch DEXSTEEL high-carbon blade and Sani-Safe handle, but ground straight. A straight edge parts flesh cleanly rather than tearing at it, which shows on anything presented cut-face up.
Straight parers suit garnish and presentation work: turning vegetables, segmenting citrus, slicing radish and shallot thin, trimming for plating. Three in a set covers a station where more than one person is working the same board.
