The F in the model is for flexible, and it is the whole difference from the stiff and narrow boning knives. This blade gives under pressure so it can ride the surface of a bone through a curve, taking the meat with it instead of cutting across the contour.
Flexible boners suit poultry and fish frames, and any cut where the bone is rounded rather than flat — ribs, shoulder, the ball of a joint. The trade-off is that flex makes it a poor lever, so joints still want the stiff knife.
