A cimeter is the most curved blade in a butcher’s kit — the belly sweeps up so the edge stays in contact as the knife is drawn back through a cut. Ten inches gives enough length to portion a strip loin or a rib section in single passes.
Steak cutting is what it exists for: taking ribeyes off a rack, portioning a strip loin, trimming and squaring large sections. The length and curve together mean a steak comes off in one motion, which is what keeps the face flat and saleable.
